2014 Recipe File: Cognac Cocktail Concoctions

Cognac, named after the town of Cognac, France, is a variety of brandy produced in the wine-growing region surrounding the town in which it takes its name. And different parts of the Cognac region produce different-tasting spirits.

With its continued growth in popularity in craft cocktail bars around the country we have put together a list of delicious recipes for you to recreate at your venue.

Djoyeus Sour

2 oz. Lambise Classique
1 oz. Pierre Ferrand Ambre
1 oz. Cinnamon Syrup
.5 oz. Lemon Juice
12 Cranberries
2 Thyme Sprigs
1 Egg White

Muddle cranberries with cinnamon syrup in a pint glass. Add cognac, lemon, thyme and egg white, then dry shake. Add ice and shake.  Double-strain into coupe or martini glass, top with Lambise Classique and garnish with a thyme sprig and a cranberry.

Campari Stinger

1 oz. Campari
1 oz. High Proof Cognac
¼ tsp. Grade B Maple Syrup
2 Mint Sprigs

Muddle mint in cocktail shaker. Add other ingredients. Shake and strain over crushed ice into a rocks glass. Garnish with a mint sprig.

Sling Royal

1.25 Hennessey XO
.25 Campari 
.25 Sweet vermouth
.25 Cherry herring
Top with 2/3 oz. of champagne. 

Serve in iced Bordeaux glass.  Garnish with cucumber wheels, orange half-moons and a cinnamon stick.

Sling Royal


Brandy Old Fashioned

1 Sugar cube or 1 tsp. 2:1 simple syrup
2 Dashes Angostura bitters
1 Orange wedge
1 Cherry, preferably Amarena or Maraska
2 oz. Brandy or Cognac

In a chilled old fashioned glass, muddle the sugar, bitters, orange wedge and cherry into a thick paste, careful not to work the orange peel. Add brandy or Cognac, stir, and fill glass with crushed ice and serve.

Sidecar

1.5 oz. VS or VSOP Cognac
.75 oz. Cointreau
.75 oz. Fresh lemon juice
Garnish with Orange peel

Coat the rim of a cocktail glass with sugar and set aside. (Do this a few minutes ahead of time so the sugar can dry and adhere well to the glass.) Add the remaining ingredients to a shaker and fill with ice. Shake, and strain into the prepared glass. Garnish with a piece of orange peel.

3/4 oz. Cabo Diablo
3/4 oz. Cognac
3/4 oz. Dolin Sweet Vermouth
1/2 oz. Cherry Heering

Add all ingredients to a shaker with ice and stir vigorously. Strain and serve on the rocks.
