And different parts of the Cognac region produce different-tasting spirits. Djoyeus Sour
2 oz. Lambise Classique Muddle cranberries with cinnamon syrup in a pint glass. Add cognac, lemon, thyme and egg white, then dry shake. Add ice and shake. Double-strain into coupe or martini glass, top with Lambise Classique and garnish with a thyme sprig and a cranberry.

Campari Stinger 1 oz. Campari Muddle mint in cocktail shaker. Add other ingredients. Shake and strain over crushed ice into a rocks glass. Garnish with a mint sprig. |

Sling Royal 1.25 Hennessey XO Serve in iced Bordeaux glass. Garnish with cucumber wheels, orange half-moons and a cinnamon stick. |

Brandy Old Fashioned 1 Sugar cube or 1 tsp. 2:1 simple syrup In a chilled old fashioned glass, muddle the sugar, bitters, orange wedge and cherry into a thick paste, careful not to work the orange peel. Add brandy or Cognac, stir, and fill glass with crushed ice and serve. |

Sidecar 1.5 oz. VS or VSOP Cognac Coat the rim of a cocktail glass with sugar and set aside. (Do this a few minutes ahead of time so the sugar can dry and adhere well to the glass.) Add the remaining ingredients to a shaker and fill with ice. Shake, and strain into the prepared glass. Garnish with a piece of orange peel. |
