Consumer sentiment is shifting, and it's more important than ever to keep up with what products align with the needs and preferences of your guests.
Enter GlobalData’s Ai Palette. The platform has analyzed data from thousands of food and beverage ingredients to identify those that have high growth and high engagement. This analysis is based on real-time data points collected from social media and global retail sites over the past two years, as measured in June and July 2025, and includes a comparison of compound annual growth rates (CAGR) over that period. The data analysis found that emerging food and beverage ingredients are grouped under four key consumer trends.
1. Functional Wellness
It's no secret that consumers are looking to eat and drink better, and this trend highlights the use of functional ingredients that improve the nutritional value of foods and beverages, providing consumers with health benefits beyond basic nutrition.
Zinc is emerging as a key ingredient in the food and beverage sector due to its significant role in promoting functional wellness, supporting immune function, wound healing, and metabolic health.
2. Distinct Flavor Fusions
One way consumer sentiment is shifting is through tastebuds. Today's consumers are becoming more adventurous in what they choose to eat and drink. They are interested in international flavors, spicy and sweet flavors, and unexpected flavor combinations.
An example of a unique trending flavor is gochujang. This Korean chili paste is gaining popularity in the U.S. condiments market for its ability to enhance flavor fusions with a mix of heat, sweetness, and umami. Over the past two years, gochujang has experienced a remarkable growth rate of 28.5%, supported by 264,000 data points from Ai Palette, appealing to adventurous consumers seeking authentic and spicy culinary experiences.
3. Global Takeover
Speaking of international flavors, their penetration into new markets and categories is breaking traditional culinary boundaries.
Take miso, for example. It is emerging as a key ingredient in the food and beverage sector, thanks to its versatility and health benefits, which align with the global demand for wholesome, flavorful options. Miso's growing popularity in condiments showcases its ability to enhance various dishes with its unique umami profile. Miso has seen a remarkable growth of 28.2% since July 2023, supported by nearly 70,000 Ai Palette data points, emphasizing its cultural significance and premium quality.
4. Nature’s Pantry
On the heels of the wellness movement, this trend heralds a resurgence of natural ingredients, revitalizing them with contemporary applications that underscore their timeless appeal and align with the growing demand for wholesome food and drinks. Peas are growing in importance as a vital component of this trend due to their fresh and natural qualities, which offer a distinctive and wholesome addition to culinary applications, with multiple health benefits. Their rising popularity in Indian snacks underscores their versatility and appeal in global food innovations.
