August is a bubbly month with National Spritz Day on August 1 and National Prosecco Day celebrated on August 13. And rightfully so, as who doesn't love a refreshing spritz in the summertime?
Here are a collection of sparkling cocktail recipes perfect for the last month of summer.

The Pear-Fect Spritz
Ingredients:
1.5 oz Belle de Brillet
2 oz Soda Water
3 oz Dry Prosecco
1 Squeeze of a lemon wedge
Directions:
- Pour all ingredients into a glass full of ice and stir gently.
- Garnish with a slice of lemon.

Southern Barbecue Spritz
Ingredients:
1.5 oz Cognac VS
¾ oz. Granny Smith honey syrup*
- 1 cup Honey Syrup (2:1)
- Peels and cores from 2 Granny Smith apples
½ oz. Amontillado Sherry
½ oz. lemon juice
2 oz. dry sparkling wine
1 oz. soda water
Garnish: apple slice and lemon wheel
Directions:
For the Granny Smith Honey Syrup
- Combine all ingredients in a saucepan and heat using a hot plate.
- Bring to a simmer and cook for three minutes.
- Remove from heat and let sit for an additional 15 minutes.
- Strain using a fine mesh strainer.
- Syrup may be stored in an airtight container, refrigerated for up to 18 days.
For the cocktail:
- Add Cognac VS, syrup, sherry and lemon juice to a shaker tin.
- Shake with ice vigorously and double strain into a chilled wine glass.
- Top with the sparkling wine and soda water.
- Garnish with a lemon wheel and a green apple slice.

Pine-Aperol Spritz
Ingredients:
2 ounces pineapple-infused Aperol*
- 1 cup Aperol
- ½ cup fresh pineapple chunks
½ ounce Velvet Falernum
3 ounces Prosecco (chilled)
1 ounce club soda (or to taste)
Ice
Pineapple wedge or leaf
Orange wheel
Directions:
For the pineapple-infused Aperol:
- Combine the Aperol and the fresh pineapple chunks in a sealed jar.
- Let it infuse in the fridge for 24-48 hours and then strain.
For the cocktail:
- Fill a large wine glass with ice.
- Add the pineapple-infused Aperol and Velvet Falernum.
- Stir gently to combine.
- Top with prosecco and then club soda.
- Stir lightly just once to mix without losing the bubbles.
- Garnish with a pineapple wedge, pineapple leaf or orange wheel.

Ritual Spritz (Non-Alc)
Ingredients:
1.5 oz Ritual Aperitif Alternative
2.5 oz soda water (or make low-ABV with prosecco)
Garnish: Orange Slice
Directions:
- Fill a wine glass to the brim with ice.
- Top with soda water or prosecco.
- Garnish with a slice of orange for additional zest.

Riunite Lambrusco Spritz
Ingredients:
1 part Riunite Lambrusco
1 part Maschio Prosecco DOC
A splash of lemonade or a squeeze of lemon
Directions:
- Serve the drink over ice.
- Garnish it with a vibrant lemon wheel.

Switch Bait
Ingredients:
1.5 oz Verjus Blanc (Fusion)
0.25 oz Bianca Sweet Vinegar (Carandini)
0.5 oz Basil Eau-de-vie
Top with Badger Club Soda
Garnish: Lemon disc, express, then discard. Basil sprig
Directions:
- Combine all ingredients, except the Badger ginger ale, in a mixing glass.
- Stir well with ice, strain into a sherry glass.
- Top with 2 oz Badger Club Soda.

Rose-Tinted Summer
Ingredients:
1 oz Empress 1908 Elderflower Rose Gin
1 oz Grapefruit Juice
1 oz Ginger Beer
Sparkling Raspberry Wine, to top
Grapefruit Slices & Frozen Raspberries, for garnish
Directions:
- In a chilled wine glass, add grapefruit slices, frozen raspberries, and ice.
- Build ingredients in the glass.
- Top with sparkling raspberry wine.
Sparkling Watermelon Strawberry Punch (Batch)
Ingredients:
2.5 cups Empress 1908 Indigo Gin
10 cups Watermelon Juice
0.75 cup Fresh Lemon Juice
0.5 cup Strawberry Syrup
750 ml Sparkling Rosé
Lemon Slices, Strawberries & Mint Sprigs, to garnish
Mini Watermelons (halved and hollowed), to serve
Directions:
- In a punch bowl, combine all ingredients and stir.
- Add fruit garnishes.
- Serve over ice in hollowed mini watermelons or punch glasses.
