What do you predict will be the number-one cocktail or food trend in 2025?

A continuing trend on-premise is the rise of "alternative Nebbiolo"—expressions beyond Barolo, Barbaresco, and Langhe [wines]. Piedmont, especially Nebbiolo, is having a moment, with its lean texture, vibrant acidity, and unique minerality resonating with many. More guests are already enamored with Nebbiolo and eager to explore lesser-known regions. It's exciting to dig into these regions, and the more you dig, the more there is to discover.
In the upcoming year, challenges in the restaurant industry in regards to wine will likely include adapting to expanded wine sales in grocery stores and the potential return of tariffs. Changes in wine laws have impacted all sides of the business, particularly affecting small, unique producers and the distributors who bring them into various markets. Back in 2019, we had 25% tariffs on French wine that made a big impact on pricing of wine. It seems more of that may be in a future with Trump returning to office.

In 2025, we can expect no-proof cocktails to take center stage. With alcohol consumption trending downward and new non-alcoholic options hitting the market almost every week, the demand for creative and sophisticated no-proof drinks is on the rise. As these options become a staple in bars, the caliber of no-proof cocktails will continue to elevate, setting a unique and flavorful standard for years to come.

I believe we’ll see a growing appreciation for cuisines that have been previously overlooked, like those of Scotland, Honduras and Guatemala. At Nàdair, we’re already tapping into this movement by showcasing the depth and nuance of Scotland’s food traditions. Diners today are seeking more than just a meal—they’re looking for stories, heritage-driven ingredients and flavors that feel authentic and surprising. For me, it’s about celebrating culture through the lens of food and giving these incredible cuisines their rightful place at the table.

Aside from specific cocktail trends likely to continue, namely the espresso martini and margarita variations, a more industry-focused prediction would be folly without the inclusion of an increased focus on global flavors, along with low-ABV or no-ABV offerings.

As we step into 2025, cocktails are becoming more than just a drink—they’re an experience. Consumers are seeking beverages with purpose and connection. These content-driven cocktails allow customers to feel part of something bigger, whether by contributing to a good cause or enhancing their event experience. Healthier Options: “Feel-Good Drinks”
Health-conscious choices are no longer a niche, they’re gaining momentum even in the cocktail industry. Consumers are increasingly drawn to beverages that align with their wellness goals, and this includes both NA (non-alcoholic) options and cocktails infused with health-boosting ingredients.

Whether it’s through charitable partnerships, health-conscious ingredients, or sustainable practices, the modern consumer expects more from their drinks. They want beverages that are not only delicious and visually stunning but also crafted with care for the planet and the community.
