NEW YORK (January 11, 2010) – Andaz Wall Street announced today that Wall & Water - an uncomplicated, unpretentious and stylish drinking and dining establishment located in the heart of New York’s financial district – will open January 25, 2010. Wall & Water proudly features market-to-table comfort food, sourced from local Hudson Valley farms and markets, in a simple and elegant setting. The seasonal menus use locally produced fresh ingredients and emphasize traditional cooking methods, simple presentation and exceptional flavors.
Wall & Water’s uncomplicated and elegant interiors, by the acclaimed architectural design firm Rockwell Group, reflect the fresh, natural direction of the menu. Earthy, robust materials such as end-grain bamboo and cerused oak play off hand-blown glass wall sconces and other detailed finishes in a lively textural juxtaposition. Free-flowing connected spaces put guests at ease and invites exploration.
The restaurant entry features grey and alabaster marble floors with painterly veining that draw guests to a central marble bar where locally grown ingredients are displayed, and small plates and desserts are crafted. In contrast, the dining areas to the right and left feature darker hues and a palette of moodier materials that establish a sleek, sophisticated look. Varied woods are showcased throughout the room, including the long Guanacaste wood tables, cut from the same tree so that grain patterns align from table to table. Numerous design elements, such as the slate colored walls and chestnut curtains, feature a pattern inspired by the watermark of dollar bills — a subtle reference to the hotel’s Wall Street address.
The unique pattern is also printed on the glass doors separating the 10-seat private dining room. Andaz Wall Street’s private dining space includes a long blonde wood table, refrigerator, residential sized bar, flat screen TV, and plush sofa seating area, serving as an intimate dining space or meeting room. A chef’s table, seating 12, at the opposite end of the restaurant provides wonderful views of Wall Street and hugs the open kitchen, where the entertainment and excitement of a living, breathing culinary space become an integral part of the guest experience.

Wall & Water chefs use traditional cooking methods while reinventing classic dishes such as smoked meats and homemade chutneys, as well as simple baked goods and rustic breads. Guests can choose sustainable products and seasonal ingredients from the Hudson Valley Region from a balanced market-to-table menu of local fish, meat, savory cheeses and farm fresh fruits and vegetables. Simply prepared, robustly flavored dishes are served on small plates, family style and a la carte. The varied seasonal wine list at Wall &Water is complemented by a full bar with signature cocktails.
Andaz Wall Street has appointed Maximo Lopez May as executive chef of Wall & Water. With the opening of Wall & Water, Chef Lopez May returns to New York after spending five years in his native Buenos Aires, where he served as chef de cuisine at Palacio Duhau-Park Hyatt Buenos Aires. Throughout Chef Lopez May’s career, he has hosted several cooking shows on Latin American food network El Gourmet. He also served as head chef at the prestigious La Corte in Las Cañitas, Buenos Aires, launched the exclusive Soho House as senior sous chef and spent time at Azul Bistro on Manhattan’s Lower East Side.
