1. What’s your pre-service or pre-shift ritual?
I walk the dining room alone before guests arrive. I straighten a chair, dim the lights just right, and remind myself: Tonight, someone is trusting us with their celebration. That responsibility fuels everything.
2. What’s a moment in your career you’re most proud of?
Surviving the pandemic and coming back stronger. Not just keeping the doors open, but evolving, growing, and proving that resilience is the most important ingredient in this business.
3. What do you wish you knew five years ago?
That your personal brand is as important as your restaurant. People don’t just invest in your food, they invest in you.
4. What’s currently on your playlist?
A mix of high-energy and nostalgic—Drake, Taylor Swift, Red Hot Chili Peppers, and anything that makes you feel unstoppable right before service.
5. If you could spend a night in any restaurant or bar from history, which one would it be?
Studio 54. Not for the food, but for the energy. Hospitality at its core is about creating a feeling people never forget.
